Firni Sevyan Pudding:
Ingredients:
Vermicelli 200 gm
Cardamoms ½ tsp
Clarified butter 4 tbsp
Ingredients for Syrup:
Sugar 1 cup
Water ¾ cup
Ingredients for Firni:
Milk 1 liter
Rice flour 4 tbsp
Cream 4 tbsp
Sugar 6 tbsp
Screw pine essence as required
Almonds, pistachio for garnish
Method:
Mix water and sugar to form syrup. Add vermicelli in clarified butter and cardamoms cook well. Add vermicelli in syrup cook on low flame. Set half in dish. Boil milk for firni. Dissolved rice flour in water add in milk cook till it becomes thick. Also add cream and sugar in screw pine essence. Add on half mix vermicelli leave for set. Add remaining vermicelli. Add firni leave for set. Garnish with almonds and pistachios. Cool and serve.
Kashmiri Goshtaby:
Ingredients for Goshtaby:
Chicken ½ kg
Fennel seeds ½ tsp
Dried ginger ½ tsp
Salt to taste
Butter 2 tbsp
Cardamoms pods ¼ tsp
Green cardamoms pods ¼ tsp
Ingredients for Gravy:
Yogurt 2 cup
Ginger garlic paste 1 tbsp
Egg 1
Cardamoms 5-6
Cinnamon 6-8
Salt to taste
Fennel seeds 1 tsp
Clarified butter ½ cup
Chicken stock 2 cup
Dried mint 1-1/2 tsp
Method:
Blend all ingredients of goshtaba and form into meat balls. For gravy mix egg in yogurt beat well. Cook and stir continuously. When boiled come add salt and dried mint. heat chicken gravy add in goshtaba. Heat clarified butter add cardamoms, cinnamon and cloves fry well. Add ginger garlic paste, fennel and dried ginger cook well. Add on gashtaba cook for more 10 minute and serve.
