Here is the recipe for my Fonio salad:
1 cup Fonio grain
1/2 of red, green, and yellow sweet peppers (roasted)
1 cup chopped Parsley
1/2 cup chopped walnut
1/2 cup black raisins
1/2 of medium red onion (chopped) and sauteed for 2-3 minutes to remove a bit of the rawness
2 tblsps of oil for sauteing onions
Vinaigrette:
1 tablespoon chick pea Tamari sauce
Juice of large lime
lime zest (optional)
1/4 cup olive oil or Grape seed oil
Red Pepper Flakes and salt to taste

Method:
In a dry pan on medium heat pour Fonio and stir until toasted – about 15 minutes. Gradually add water and stir briskly. Continue doing this for about 10 minutes until the Fonio is fluffed up and triple the size in the pan. Turn off stove and set aside. Cut up your veggies and place in separate pan. Saute onions for 2-3 minutes to remove the rawness. Pour into your serving dish. Make your vinaigrette. Add your veggies and Fonio into serving dish. Then add your vinaigrette and mix lightly to incorporate. Add walnuts and raisins. Mix and serve. Enjoy!!:)
Fonio is gluten free, It is an energy food, It is great for digestion, It aids in cardiovascular function. It is good for diabetes. It is good for weight loss.It is rich in iron. It’s benefits go on and on. It is said that Fonio is the real super food – It will displace Quinoa because it is becoming more and more popular. I don’t think it will displace Quinoa though.
