Fried Tikka
Serves 2-3
Recipe in English:
Ingredients:
-Chicken tikka pieces 4
-Hari mirch (Green chilli) paste 1 & ½ tbs
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Lemon juice 3 tbs
-Lal mirch powder (Red chilli powder) 1 tbs or to taste
-Namak (Salt) 1 & ½ tsp or to taste
-Haldi powder (Turmeric powder) 1 & ½ tsp
-Dhania powder (Coriander powder) ½ tbs
-Zeera powder (Cumin powder) 1 & ½ tsp
-Zarday ka rang (Yellow food color) ½ tsp (optional)
-Garam masala powder 1 tsp
-Cooking oil 1 tbs
-Charcoal for smoke
-Maida (All-purpose flour) ¼ Cup
-Water 1 Cup
-Cooking oil for frying
Directions:
-Make cuts on both sides of chicken pieces with the help of knife & set aside.
-In a bowl,add green chilli paste,ginger garlic paste,lemon juice,red chilli powder,salt,turmeric powder, coriander powder,cumin powder,yellow food color,garam masala powder & whisk well.
-Add chicken and rub well,cover & marinate for 2-3 hours or overnight in refrigerator.
-In a wok,add cooking oil,marinated chicken pieces,cover & steam cook on low flame for 20 minutes (10 minutes each side) then cook on medium flame until water dries up (7-8 minutes).
-Give coal smoke for 2 minutes.
-In a bowl,add all-purpose flour,water & whisk well.Flour slurry is ready!
-In a wok,heat cooking oil,dip steam cooked chicken pieces in flour slurry & fry on medium flame from both sides until golden brown (2-3 minutes).
-Serve with yogurt raita,chutney & salad.

-Chicken pieces per knife ki madad sa dono sides per cuts laga lein & side per rakh dein.
-Bowl mein hari mirch paste,adrak lehsan paste,lemon juice,lal mirch powder,namak,haldi powder, dhania powder,zeera powder,zarday ka rang aur garam masala powder dal ker ache tarhan whisk ker lein.
-Chicken dal ker ache tarhan rub karein aur dhak ker 2-3 hours ya overnight kliya refrigerator mein marinate ker lein.
-Karahi mein cooking oil aur marinated chicken pieces dal ker dhak dein aur halki ancch per 20 minutes kliya steam cook ker lein (10 minutes each side) phir darmiyani ancch per pani sukh janay tak paka lein (7-8 minutes).
-2 minute kliya koyla ka dhuwan dein.
-Bowl mein maida aur pani dal ker ache tarhan whisk ker lein.Flour slurry tayyar hai!
-Karahi mein cooking oil garam karein,steam cooked chicken pieces ko flour slurry mein dip karein aur darmiyani ancch per dono sides sa golden brown hunay tak fry ker lein (2-3 minutes).
-Dahi ka raita,chutney aur salad ka saath serve karein.
