⭐️ COOKWARE VIDEO
HOT WINGS INGREDIENTS
32 chicken wing sections (or 3 1/2 lbs)
(I used a mix of flats and drummettes)
*SEASONED DREDGE*
1/2 cup cornstarch or all-purpose flour
1 1/2 to 2 tsp salt
1 Tbsp salt-free lemon pepper
1 tsp paprika
1 1/2 tsp onion powder
1 1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp celery salt
*HOT WING SAUCE*
3 Tbsp unsalted butter
1 clove of garlic (crushed)
1 Tbsp honey
1/2 cup hot sauce
LEMON PEPPER INGREDIENTS
2 lbs (907 g) chicken wings (flats and drumettes)
juice of 1 large lemon (1/4 cup (60 ml) lemon juice)
zest of 1 large lemon (1 Tbsp lemon zest)
1/2 tsp seasoned salt (or plain salt)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp to 1 tsp lemon pepper
cooking oil for frying
FLOUR DREDGE
1 cup (130 g) all-purpose flour
1/2 cup (65 g) cornstarch
1/4 tsp black pepper
1/2 tsp lemon pepper
1/2 tsp salt
BUTTER SAUCE
5 Tbsp (70 g) unsalted butter
1 tsp lemon pepper
pinch of salt (or to taste)
1 Tbsp (15 ml) fresh lemon juice
SALT AND PEPPER WINGS INGREDIENTS
1.5 to 2 lbs (680 to 907 g) chicken wing sections
2 Tbsp (30 ml) Shaoxing cooking wine
1/2 to 1 tsp salt
1/4 tsp black pepper
2 Tbsp (15 g) cornstarch or flour (for marinade)
1/2 cup (60 g) cornstarch (for dredge)
salt and pepper to taste
cooking oil for frying
