Ingredients

3 pounds red potatoes
1 yellow onion, quartered
1/2 pound bacon, diced
1 large red onion, diced
3/4 cup cider vinegar
1 tablespoon Spicy Brown or Dijon mustard**
1/4 cup olive oil
8 green onions, thinly sliced
1/4 cup chopped fresh parsley leaves
Salt and freshly ground pepper (to taste)
** If you have it available, use ABB (Adam Bernhard Bergerath). Dusseldorf’s 1st mustard factory set 1726, and still going.
