ASIAN CHICKEN SALAD WITH CILANTRO VINAIGRETTE
makes 2-4 servings
3 cups shredded cooked chicken breast
3 tablespoons sweet chili sauce
1 (9-ounce) package chopped romaine lettuce with carrots and red cabbage
1/2 red bell pepper, cut into strips
1/2 cup shelled edamame
1/4 cup-sliced green onion
Sesame Wonton Crisps (recipe follows)
1/3 cup roasted salted peanuts
Cilantro Vinaigrette (recipe follows)
In a medium bowl, toss together chicken and chili sauce. Set aside.
In a large bowl, combine lettuce, bell pepper, edamame, and green onion.
Place a layer of Sesame Wonton Crisps on serving plates. Divide lettuce mixture over wontons. Top each serving with coated chicken and peanuts.
Drizzle with desired amount of Cilantro Vinaigrette.
SESAME WONTON CRISPS
makes 16
16 wonton wrappers
2 teaspoons extra-virgin olive oil
1/2 teaspoon black sesame seeds
1/2 teaspoon kosher salt
Preheat oven to 350 degrees F. Spray a large baking sheet with cooking spray.
Place wonton wrappers in a single layer on prepared pan. Brush with oil, and sprinkle with sesame seeds and salt.
Bake until golden brown and crisp, about 5 minutes. Let cool on pan for 10 minutes.
CILANTRO VINAIGRETTE
Makes 1 1/2 cups
1 cup extra-virgin olive oil
1/2 cup seasoned rice vinegar
2 teaspoons chopped fresh cilantro
1 teaspoon minced garlic
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
In a medium bowl, whisk togeher all ingredients. Cover and refrigerate for up to 5 days.
