Granny Sue’s Chicken Cacciatore recipe is an easy meal to make. In a large skillet lightly brown 6-8 chicken pieces, I used chicken thighs today, with Olive oil. While chicken is browning in a large pot mix 48 ounces of stewed tomatoes, 2 small Bay leaves, 1 teaspoon Basil, 2 teaspoons Oregano, 1 teaspoon black pepper, 1 teaspoon Kosher salt. Once chicken is lightly browned place in pot with stewed tomatoes and seasoning, cover, and simmer on medium heat for 1 hour. Add 1 small skiced onion and 1 medium sliced bell pepper and simmer on medium heat for another 20-25 minutes. Serve on a bed of white rice. This is a very tasty meal and easy to make.
