Grilled Caesar Salad
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Servings: 6
Ingredients:
3 hearts of romaine, quartered lengthwise, with the cores intact
1 cup croutons
1⁄2 cup grated Parmigiano-Reggiano
For the Dressing:
3⁄4 cup extra virgin olive oil
1⁄2 cup grated Parmigiano-Reggiano
1⁄2 teaspoon freshly ground black pepper
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
2 teaspoons anchovy paste
2 teaspoons minced garlic
2 tablespoons lemon juice
1⁄4 teaspoon kosher salt
1 large egg yolk
Instructions:
Preheat grill for medium high heat.
Grill Romaine hearts until lightly charred — 2 to 3 minutes per side. Remove from grill and cool slightly.
For the dressing:
Combine garlic, anchovy paste, cheese, mustard, lemon juice and salt in a food processor and mix thoroughly. Add mayonnaise and blend together to form a thick base. In a slow stream add olive oil.
Pulse the dressing for one minute. Spoon out dressing to a bowl and season to taste with salt and pepper
Chop the romaine into bite size pieces. Top with dressing and ad croutons.
Serve immediately.
Tips: Grilled chicken goes great with this salad. Any leftover dressing should be refrigerated.
