Grilled Corn Salad

We’ve been making this salad for 20+ years. You make a nice easy dinner when you buy the protein pre-marinated or just throwing a few sausages on the grill… and then grill a tasty veggie dish on the side.

This corn salad started from one of my first cook books, William-Sonoma Grilling. It’s changed over the years based on what we have in the fridge. You can add avocado, diced fruit, jalapeño, garlic, asparagus, cheese… you get the idea.

This is also a nice dish to take to a tailgate, but make it the morning of.

Ingredients (serves 8-10 sides)
* 4 white corn (grilled or steamed)
* 4 sliced thick cut bacon or cubes of sausage
* 1 cup cherry tomatoes (sliced in 1/2)
* 3-4 TB sliced basil
* 2 limes (juiced)
* 2 TB extra virgin olive oil
* 1/2 red onion (diced)
* 1/2 red bell pepper (diced)
* Salt & Pepper (to taste)

Store Bought Sprout’s
5 lbs Jamaican Jerk Wings ($5.49/lb)
– We call in advance and request flats only.

Directions:
1. Cook bacon medium to medium-well.
2. Grill or steam corn. If grilling, grill for about 8 minutes or until the corn chars a little.
3. Grill wings. 10 min per side. Flipping every two minutes.
4. Throw rest of ingredients in a bowl and mix.

Best when made day of meal.
