With the combination of carrot, coconut milk and pistachios, this golden coloured payasam / kheer is deliciousness at its peak.

Shelf-life : 1 day (Store in refrigerator and consume same day)
INGREDIENTS:
1. Ghee – 1 tbsp
2. Carrot, grated – 1 cup (Carrot can also be boiled and mashed)
3. Boiled or pasteurised milk – 2 cups
4. Sugar – 1/2 cup or Jaggery – 1/4 cup
5. Coconut milk – 1/2 cup
6. Cardamom powder – 1/4 tsp
7. Pistachios – as desired (Other nuts and raisins can also be added)
