Cooking a whole chicken may seem scary, but with this recipe for quick and easy roast chicken in your pressure cooker, you’ll save time and be stress-free. Mila Buckley shares her tips for making H-E-B Natural Whole Roasting Chicken in her pressure cooker, complete with delicious garlic herb butter.
Ingredients:
1 stick of softened butter
3 tablespoons lemon juice
2 cloves garlic
2 tablespoons fresh parsley
1 tablespoon dried basil, oregano, rosemary,
2 teaspoons salt
1 teaspoon black pepper
1, 3-4 lb whole chicken
2 cups of chicken stock
Instructions:
1. Make your garlic herb butter with softened butter by combining all of the herbs.
2. Prepare your whole chicken and remove giblets if necessary. Pat the chicken dry.
3. Season with salt and pepper, then rub your softened herb butter mixture all over your chicken.
4. In your pressure cooker, pour in chicken stock, and insert the wire rack.
5. Place the chicken on the wire rack breast side up and set the pressure cooker on high, for 45 minutes, with a quick release.
6. Once the pressure has released, set the air fryer function to crisp, and crisp the skin on high for 10 minutes.
7. Pull the chicken out, de-bone, and enjoy!
