Healthy Garlic Parmesan Chicken Recipe with Cucumber Salad | Cook With Me| Date Night

In this video I share a healthy, delicious & nutritious Garlic Parmesan Chicken recipe with an easy cucumber salad recipe. This dish helped me to lose 55lbs on my weight loss journey. Who says eating healthy has to be boring?

This meal can be adapted to be made a keto friendly/keto meal by substituting wheat noodles for zucchini noodles (zoodles.) Pasta is always a fun date night meal. Hopefully this gives you a date night idea for you and your significant other. This dish will allow you to keep it fun while also keeping it healthy and did I say its delicious and nutritious?

Ingredients:
2 chicken leg quarters ( Can substituted with 4 thighs)
1 ½ cup Unsweetened Almond Milk
½ cup chicken broth
1/3 cup Shredded Parmesan
2 tbs minced garlic
2 tbs corn starch
Olive oil
Season All
Garlic powder

(I always cook to taste. I ended up adding an additional cup of Almond Milk which made me use an additional tsp of minced garlic, and I also increased the shredded Parmesan to ½ cup)

Instructions:

Chicken: Season Chicken with season all and garlic powder ( Season to taste.) In a large skillet add 2 tablespoons of olive oil. When oil starts to sizzle add 4 pieces of chicken and cook for 3 minutes. Once chicken is browned, flip and cook other side for 3 minutes. Remove from skillet and place in baking pan. Place in oven heated to 375 degrees. for 20 minutes.

Sauce: In large skillet on medium high heat add 1 tbs olive oil. Once heated add 2 tbs minced garlic. Saute in grease until minced garlic becomes fragrant. Add ½ chicken broth and 1 ½ cups of Almond milk and 2 tbs of corn starch. Bring to a boil. Season with season all and garlic powder.

Return chicken to skillet and reduce heat to low. Allow to simmer for 10 minutes or until sauce reaches desired consistency. Remove skillet from heat and add parsley flakes for garnish. Plate chicken on top of whole grain pasta and grizzle creamy sauce over chicken and pasta.

Cucumber Salad Recipe:

Ingredients:
1 large cucumber
Salt
Pepper
1/3 cup lite Italian dressing

Instructions:
Rinse cucumber thoroughly under warm water. Slice cucumber into small bite size pieces. Season with salt and pepper. Add 1/3 cup lite Italian dressing and stir. Apply plastic wrap and place in fridge for 30 minutes.
