Healthy Sweet Potato Salad Recipe // This is one of our favorite family recipes…. Healthy Sweet Potato Salad!

Instead of making potato salad with white potatoes, you can absolutely make it with sweet potatoes. This adds a lovely subtle sweetness to the dish, that contrasts so well with the savory dressing of the potato salad.

Here is the full recipe:
Ingredients:
2 lbs sweet potato, cubed, steamed and cooled
3 stalks celery, finely chopped
2 green onions, green parts only thinly sliced
For the dressing:
1/2 cup light mayo
1 ½ tbsp apple cider vinegar
1 tsp dijon mustard
2 cloves garlic, minced
1 tsp celery seed
3 tbsp olive oil
Salt and pepper to taste

Instructions:
For the dressing:
In a medium bowl, whisk together the mayo, apple cider vinegar, dijon mustard, garlic and celery seed till well combined. Taste and season with salt and pepper as desired.
In a thin stream, slowly pour in the olive oil, whisking continuously.
For the salad:
In a large bowl, add in the sweet potato, celery and green onions. Toss to combine.
Slowly add in about half of the dressing and gently mix together to coat the sweet potatoes. Add more dressing as needed and mix gently.
Taste and add more salt and pepper if desired.

Tips:
Serve the salad cold or at room temperature.
Store any leftovers in an airtight container in the fridge, for up to 1 week.
