This recipe for Apricot Chicken is a real beauty. Very easy to make, beautifully sweet yet savoury and packed with the delicious flavour from the thyme, wine and garlic. Very easy to make and can certainly be enjoyed as a quick mid-week meal. Enjoy!
Here’s How To Make Apricot Chicken
1. In a large saucepan, heat the olive oil over a low heat and add the chicken breasts and cook for 8 -10 minutes or until the chicken is thoroughly cooked.
2. Remove the chicken from the pan and set it aside.
3. Add the onions and garlic to the pan and cook for a few minutes. Add the thyme, apricot jam, wine and chicken stock and mix through.
4. Simmer, uncovered for around 10 minutes to allow the sauce to thicken. Add the chicken breasts back to the sauce and cook for a further 5 minutes. Serve
