How to cook a Simple Peruvian chicken recipe

Cooking with the KingFish Peruvian style Chicken
Ingredients
One 4 pound chicken
½ teaspoon dried rosemary
2 teaspoons of ground cumin
1/2 teaspoon dried oregano
3 garlic cloves minced
3 tablespoons soy sauce
1 tablespoon white vinegar
Juice of 1/2 lime
1 Tablespoon hoison sauce (optional)
12 oz beer (darker the better)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika

Directions

Combine all the ingredients minus the chicken and paprika in a blender and blend until combined. Pour the marinade over the chicken in a large zip lock bag or pour all over chicken in a bowl and let it marinate in the refrigerator for 24 -36 hours.
Next Day.
Preheat the oven to 400 degrees F.
Remove the chicken from the marinade and put on a rack in a roasting pan. Sprinkle with paprika. Pour marinade under the rack. Roast for about 1 hour. When you stick a knife in the thigh the juices coming out should not be pink. Let the chicken rest for 15 minutes before slicing and serving. Enjoy…

For the Peruvian Green Sauce

1 packed cup of fresh cilantro
1 Jalapeno pepper diced
2 garlic cloves chopped
1 Tablespoon of Extra Virgin Olive Oil
2 ½ teaspoons of freshly squeezed Lime Juice
¼ teaspoon of kosher salt
1/3 cup of mayonnaise
1 Tablespoon of water

Pour the above ingredients in a blender for about 1 minute and refrigerate until ready to use. Enjoy…Easy Peruvian Chicken Recipe. I’m just a home-cook originally from Brooklyn, NY.
