How To Make Southern Style Stewed Chicken
INGREDIENTS:
3-4 pounds bone in chicken thighs
1 large finely diced yellow onion
3 stalks finely diced celery
1 cup finely diced bell pepper
2 quarts (8 cups) chicken broth
1/2 cup flour
1/4 cup oil
2-3 tbsp. butter
1 tbsp. minced garlic
2-3 tsp. Cajun seasoning – season chicken and gravy
salt and black pepper
1 tbsp. cornstarch/water slurry
Season both sides of chicken with salt, black pepper and Cajun seasoning.
In a deep skillet or pan on medium high heat, add oil and chicken skin
side down. Cook for 5-7 minutes until browned and then flip and cook
3-4 more minutes. Remove from pan.
In same pan on medium heat, add butter, onions, celery and bell peppers.
Cook and stir for 2-3 minutes.
Add minced garlic. Cook and stir for 1 minute.
Add flour, cook and stir for 3-4 minutes.
Slowly add water/broth. Turn up heat to bring to simmer.
Add Cajun seasoning and any other seasonings. Stir.
Add chicken back into pan.
Simmer for one hour and flip half way through. Occassionally stir.
Taste for seasoning and add. Add hot sauce – as much as you like.
Stir and simmer for another 30 minutes.
Remove chicken. Serve as is or you can shred.
Thicken sauce with cornstarch slurry.
Serve with white rice, potatoes or noodles.
