HOW TO MAKE CAESAR SALAD DRESSING
This is a recipe for the best and easy Caesar salad dressing. I prefer homemade Caesar salad dressing to store bought because I don’t like the additives, sugars and vegetable oils that make up a store bought dressing.
In this recipe for Caesar salad, I use avocado oil as the vehicle. Freshly grated parmesan cheese, minced garlic, fresh lemon juice and anchovy contribute to the salt and acid part of the caesar dressing. This recipe is adapted from my favorite Caesar dressing recipe from Samin Nosrat and her book, Salt Fat Acid Heat. In my variation, I add in a little bit of Apple Cider Vinegar and Coconut Aminos.
This homemade caesar dressing is easy to make, takes about 15 minutes total to make it. Adding the garlic to the egg yolk in the beginning helps the mayonnaise emulsion stick together.

CAESAR SALAD DRESSING RECIPE
1 egg yolk
¾ cup avocado oil
2 garlic cloves, minced & pressed into a paste with a pinch of salt
4 tablespoons lemon juice
8 anchovy fillets, minced and pressed into a paste
1 teaspoon apple cider vinegar
½ teaspoon coconut aminos, Worcestershire sauce or coconut vinegar
3 ounces Parmesan cheese, grated
Whisk together the egg yolk and garlic.
Slowly pour into the avocado oil until a mayonnaise emulsion starts to appear. Continue adding in the rest being careful not to whisk too vigorously and break the emulsion.
Whisk in lemon juice, anchovy, parmesan, and remaining ingredients.
Can be stored in the refrigerator for up to a week.
