Marinade Ingredients:
750 g chicken, cut into big pieces and scored
½ tsp lime juice
½ tsp salt
½ tsp Kashmiri red chili powder
¼ tsp turmeric powder
1 tsp garlic paste
1 tsp ginger paste
½ tsp pepper
1 tsp cooking oil
½ tsp garam masala
For Curry:
3-4 tbsp cooking oil (for frying)
1½ cups thinly sliced onion
Pinch of salt (for onions)
3 cardamom pods
2 small cinnamon sticks
2 tbsp blanched almonds or cashews
3 tbsp yogurt
4 tbsp water (for onion paste)
1 tsp ginger paste (additional)
1 tsp garlic paste (additional)
3 green chilis
¼ cup + 1 tbsp tomato puree
½ tsp turmeric powder (additional)
2 tsp Kashmiri red chili powder (additional)
1 tsp chili powder (yellow or red)
1½ tsp coriander powder
¾ tsp cumin powder
¾ tsp salt (to taste)
½ cup milk
Pinch of sugar
½ cup water (for gravy)
½ tsp chaat masala
1 tsp kasuri methi (dried fenugreek leaves)
1 tsp butter
Lime juice and garam masala for garnish
Instructions:
Prepare the Marinade: Combine all marinade ingredients in a bowl. Add chicken pieces and coat well. Let it marinate for 15-20 minutes.
Fry the Onions: In a pan, heat 3-4 tbsp oil. Add onions with a pinch of salt and fry until brown. Then add cardamom, cinnamon, and nuts. Continue frying until the onions are golden brown. Remove and blend with yogurt and water to form a paste.
Cook the Chicken: In the same pan, fry the marinated chicken pieces for 2 minutes per side. Set aside.
Make the Gravy: Clean the pan and heat 1-2 tbsp oil. Sauté ginger, garlic pastes, and green chilis. Add tomato puree, additional spices, and water. Cook for a few minutes.
Combine and Cook: Add salt, onion paste, and fried chicken. Cook until oil separates. Add milk, sugar, and water. Cover and simmer.
Final Touches: Add chaat masala, kasuri methi, and butter. Cook for a final 5 minutes.
Garnish and Serve: Garnish with lime juice and garam masala. Serve hot with naan.
