INGREDIENTS FOR CHICKEN:
Boneless chicken breasts or chicken thighs
Mexican cheese or mozzarella cheese
1 tsp oregano
1tsp cumin
3-4 garlic cloves or minced garlic
2-3 tsp salt
1tsp black Pepper
2 tbsp olive oil
1 can of chipotle peppers in adobo sauce ( cannot substitute this is main ingredient!)
BROWN RICE:
8 cups water
1 cup rice
2 tsp salt or to taste
Boil water with salt
Add cup of rice and let boil for 30 mins ( lid on but not fully closed)
Turn stove off and drain water
Cover for 20 mins!
