If you’ve ever wondered how to make extra crispy korean fried chicken, here’s what you need to know:
– use dark meat because it’ll be more juicy and less likely to overcook
– season the raw chicken with your favorite spices: i did a simple salt, pepper and garlic
– buy korean fried chicken flour [ 치킨튀김 ] from a korean market, or use potato starch as a substitute
– mix equal parts milk and flour to batter the chicken, then coat it in more flour
– vigorously shake the chicken pieces in a large bowl for better texture
– let the battered and breaded chicken sit on a rack to develop craggily bits which will give you extra crunch
– fry once for 5-7 minutes, then let it cool and double fry for 1-2 minutes
