INGREDIENTS:
4-inch block of daikon radish
2-inch block carrot
1 tbsp water
1 1/2 tbsp rice vinegar
1 1/2 tbsp sugar
salt
DIRECTIONS:
Peel and cut daikon into 1/8 inch strips. Do the same with the carrot. Put the daikon and carrot sticks into a bowl. Sprinkle on 1 tsp salt. Give it a quick massage and set it to the side for 10 minutes.
In the meantime, combine vinegar, sugar, 1/2 tsp salt and 1 tbsp water in a small bowl and mix until combined.
Squeeze out excess water from the carrot daikon mixture. Really try to get as much water out of them as you can. and place in another bowl. Add seasonings and mix well. Let it sit for at least 10 minutes before serving. You can also let it marinate for a couple of hours for a more intensely flavored salad.
