HOW TO MAKE PUMPKIN BARS:
Serves: 16 | Prep Time: 15 minutes | Cook Time: 35 minutes

0:01 | Preheat oven to 350ºF; grease an 8-inch square baking pan.
0:04 | Whisk 2 large eggs & slowly add 1 stick melted butter, whisking to incorporate.
0:07 | Add 1 box Trader Joe’s Pumpkin Bread & Muffin Mix, ¾ cup of sugar, and 2 Tbsp. of water.
0:09 | Fold ingredients together with a spatula just until combined.
0:20 | Transfer batter to baking pan; smooth into an even layer (batter will be sticky).
0:29 | Bake on center rack for 35 minutes, until top is golden brown & toothpick comes out clean.
0:34 | Remove from oven and let cool completely on cooling rack before slicing.
0:37 | For topping, whisk 1 cup sour cream & ½ Tbsp. vanilla.
0:39 | Add 1/3 cup powdered sugar; continue whisking until combined. Cover and refrigerate.
0:48 | To serve, slice into squares and top with a dollop of sour cream topping.
0:50 | Sprinkle with pumpkin pie spices, if desired, and serve.
