Savannah’s Kale Salad Recipe
Salad Ingredients:
1 large bunch kale, washed, chopped finely
1 14-ounce can baby artichoke hearts, drained, chopped
1 14-ounce can hearts of palm, drained, chopped
1 8-ounce can water chestnuts, drained, chopped
1 cup shredded carrots
8 radishes, rinsed, chopped
6 mini seedless cucumbers, rinsed, chopped
1 cup grape tomatoes, rinsed, halved
Shallot Dressing, recipe follows
Directions
1.In a large salad bowl, combine the kale, artichoke hearts, hearts of palm, water chestnuts, carrots, radishes, cucumbers and tomatoes; toss to combine.
2. Add the dressing and toss to combine.
Shallot Dressing Ingredients:
½ cup extra virgin olive oil
Juice of 2 lemons
1 ½ tsp. garlic, minced
2 shallots, minced
1 tsp. rice vinegar
Salt and pepper
Directions:
1. In a small bowl, combine the oil, lemon juice, garlic, shallots and vinegar; whisk well.
2. Season with salt and pepper, to taste, and whisk to combine.
NOTE: This salad can be made and dressed in advance.
