Indonesian Chicken Rendang Recipe:
Chicken (Boneless Leg) – 500g
Rendang Paste :
Garlic (finely chopped) – 6 Cloves
Ginger (finely chopped) – 1 tbsp
Lemongrass (finely chopped) – 1 stalk
Red Chilli (finely chopped) – 2 nos
Kashmiri Chilli Powder – 1 tsp
Cumin Seeds – 2 tsp
Coriander Leaves – 4 sprigs
Tamarind Paste – 1 tbsp
Lemon Juice – ½ no
Salt – 1 tsp
Sugar – 1 tsp
Kaffir Lime Leaf (julienned & deep fried) – 1 big leaf (For Garnish)
Oil – 2 tbsp + 1 tbsp (for the paste)
Cooking Instructions:
1. Prepare rendang paste with Garlic, Ginger, Lemongrass, Red Chillies, Cumin, Fresh Coriander, Tamarind Paste, Lemon Juice, Salt and sugar.
2. Heat Oil in a pan, add the rendang paste and cook it till it gives out an aroma and releases oil.
3. Add the chicken and mix it well. Cover and cook it for 5 minutes, stirring occasionally.
4. Cook the chicken till it is coated evenly with the rendang paste and the mixture is almost dry.
5. Check the taste and transfer it to a bowl. Garnish it with some fried Kaffir Lime leaves. Serve it hot.
