Karuveppillai Chicken Varuval Recipe:
To Puree:
Shallots – 20 nos
Coriander Leaves – 4-5 stalks
Curry Leaves – 15 sprigs
Oil – 2 tbsp
Other ingredients:
Oil – 2 tbsp
Cinnamon – 1 stick
Green Cardamom – 4 nos
Cloves – 5 nos
Fennel Seeds – 1 tsp
Cumin Seeds – 1 ½ tsp
Curry Leaves – 2 Sprigs
Dried Red Chilli (deseeded) – 4 nos
Onion (thinly sliced) – 3 nos
Red Chilli Powder – 1 tsp
Coriander Powder – 2 tsp
Turmeric Powder – ¼ tsp
Chicken Curry Cut – 1 kg
Water – ¼ Cup
Salt – 1 tsp
Black Pepper Powder – 1 tsp
Coriander Leaves (finely chopped) – For Garnish
Instructions:
1. Add the ingredients for pureeing to a blender and blend them to a fine paste.
2. Heat oil in a pan, add fennel, cumin seeds, curry leaves and let them crackle.
3. Add the onions and saute till they turn golden brown
4. Add ginger garlic paste and cook it for a few seconds.
5. Add the masala powders and cook it for a minute
6. Add the curry leaf paste and cook it well for a minute
7. Add the chicken pieces and cook it for 2-3 minutes on a high flame, mixing continuously
8. Add water, salt and mix well.
9. Cover and cook on a low flame for 15 minutes, stirring occasionally
10. Open the pot, add black pepper powder and mix well.
11. Cook the mixture till it is dry.
12. Garnish with coriander leaves and serve it hot
