To Make Kasi Halwa
Ash Gourd – 3 1/2 Cups
Sugar – 1 Cup
Cardamom Powder – 1/2 Tsp

Ghee – 2tbsp (Buy: https://amzn.to/2RBvKxw)
Yellow Food Coloring
Method:
1. Put ghee in a pan and add cashewnuts to it. Roast them until they are golden brown in colour and then keep them aside.
2. To the same pan, add the raisins, roast them until they are golden brown and then keep them aside.
3. Take ash gourd, wash it and grate the inside white part of it leaving the outer green layer.
4. Put all the grated vegetable into a strainer and strain off the excess water.
5. Now transfer this strained ash gourd to a pan and saute it for 15 mins on a medium flame.
6. After 15 mins, add sugar and let it melt completely.
7. To this, add cardamom powder and mix well.
8. Next, add ghee and mix well. Add in the yellow food colour and mix it all again.
9. Finally add in the roasted cashewnuts and raisins.
10. Once the moisture is fully gone, add in some more ghee and mix well.
11. Yummy Kashi halwa is ready to be served hot and nice!
