Kefir 101 and an easy smoothie recipe. Done!
It’s ALIVE! Kefir is a living organism that works to ferment milk and create probiotics that are great for your digestive system. They do require upkeep but its minimal. You can get milk kefir grains or water kefir grains and have two different kinds of yummy treats going. That’s my plan. I have done both and I enjoy both. There are a few rules to remember.
Never use metal. I store my kefir grains in sterilized glass jars. The small colander I use when separating the grains back out of the fermented milk seems to work better than the small plastic strainer that I started with. A wooden spoon or plastic spatula may come in handy as well.
Need to slow it down? Refrigerate. Separating the kefir out and placing it in fresh milk is essential for keeping it alive. It needs to feed to stay alive so we must be consistent. This doesn’t have to mean every day. When I need to skip a few days I simply drop my kefir grains in some fresh milk and pop them in the fridge for a few days. You can revive them and speed up the process by leaving them on your counter top to come back up to room temp. Counter top means transferring daily, fridge means transferring every few days.
Prepare to be amazed! First thing in the morning is a great time to break your fast with some gut feeding bacteria. Smoothies are my favorite in the mornings because I am not always ready to eat real food until after my bus route. Blueberries from the freezer are my favorite but I love all berries. I use honey as a sweetener but you can use whichever kind you like. Whip it! Whip it good! I blend until smooth, stick a straw in it and go!
We really just have one goal – to make your food life better. Ok that, and be entertained at the same time. And have you learn a few things along the way. So let’s make it 3 goals then.
