Kerala Chicken Fry Recipe:

Chicken (medium-size pieces) – 500 grams
Shallots – 6 nos
Green Chilli – 3 nos
Ginger – 2-inch piece
Garlic – 8 nos
Curry Leaves – 15 nos
Coconut Oil – 1 tbsp
Salt – ¾ tsp
Black Pepper Powder – ½ tsp
Kashmiri Chilli Powder – 1 ½ tsp
Coriander Powder – 1 tsp
Garam Masala Powder – ½ tsp
Fennel Powder – ½ tsp
Rice Flour – 2 tbsp
Curry Leaves – 25-30 nos
Oil (for deep-frying) – As Needed

Cooking Instructions:

1. Blend the shallots, green chillies, ginger, garlic, curry leaves and coconut oil into a paste.

2. Add the chicken along with salt, black pepper powder, Kashmiri chilli powder, coriander powder, garam masala powder and fennel powder. Mix well using your hands. Marinate for at least 30 minutes.

3. Add rice flour and mix well.

4. Deep fry in oil on high heat for 2 minutes. Reduce the flame to medium and cook for 6 more minutes. Add curry leaves a few seconds before taking the chicken out of the oil. Serve hot.

5. Serve with lemon wedges.
