Kesar Pista Cake – Diwali Cake | Easy To Make Diwali Dessert | Eggless Recipe | केसर पिस्ता केक

Ingredients :
1.5 cup milk + 2 tbs milk
1 tbs lime juice
3/4 cup white flour (maida)
1/2 tsp baking powder
1/4 tsp baking soda
1/4th cup oil
1/2 cup powder sugar
Some kesar threads
1 tbs sugar
A pinch + 2 pcs of cardamom (elaichi) powder
(To garnish on top – add whipped cream, chopped pistachios, rose petals, elaichi powder)
To Make Cake :
Take a small bowl add 1/2 cup milk and add 1 tbs lime juice in it, mix it and leave for a while.
Take another mixing bowl, add 3/4 cup white flour (maida)
Add 1/2 tsp baking powder
Add 1/4 tsp baking soda and mix it.
Further take a big mixing bowl, add 1/4th cup oil(any odourless oil).
Add 2 tbs milk
Place a food strainer on it and add 1/2 cup powder sugar in it.
Then add flour mixture in it with the help of strainer.
Add a pinch of cardamom powder (for fragrance/you can add vanilla essence – optional).
Then add milk and lime juice mixture, mix it well and make smooth batter.
Take a small baking mould/cupcake mould/6 inches cake tin, place a parchment paper in it and pour the batter.
Pre heat pressure cooker for 10 mins alongwith a stand and then keep cake moulds in it, cover the lid(remove the whistle) and cook it for 40 mins.
To Make Milk Mixture :
Further heat up the small pan, add 1 cup milk in it.
Take a small bowl, add some kesar threads in it alongwith 2-3 spoon warm milk.
Then add 1 tbs sugar in pan
Add cardamom (elaichi) powder (2 pcs)
Add kesar milk in the pan and cook it on medium flame for 10 mins.
Check if the cake is cooked by inserting a toothpick in it, if it comes out clean then cake is cooked.
Take it on a serving plate, insert toothpick in it to make some holes in the cake then pour milk on it (so that cake will absorb milk).
Add some whipped cream, chopped pistachios, rose petals and sprinkle some elaichi powder on top.
