KISIR RECIPE – Turkish Fine Bulgur, Tomato And Fresh Herb Salad

In this episode, I’d like to share with you my version of ‘KISIR’ (kus-uhr) recipe, one of the most popular dishes in Turkish cusine. It is very easy to make, budget friendly and so yummy! It is usually served at tea time, with other dishes but it makes a great picnic food too. We also love to eat KISIR as a side dish, even the day after its made. I believe its flavor gets better, as the salad rests one more day.

INGREDIENTS
1 cup fine bulgur
1 cup hot water
1 large onion, finely chopped
1 medium tomato, pureed in a blender
1 cup of each: chopped parsley and green onion
1 clove garlic
1 real tablespoonful tomato (or sweet pepper) paste
1/2 cup freshly squeezed lemon juice
1/4 cup pomegranate sour sauce (or lemon juice)
A pinch of granulated sugar
Sweet paprika, cumin
Salt & pepper
Olive oil
6-7 lettuce leaves
DIRECTIONS
Combine 1/4 cup olive oil and 1 clove chopped garlic, in a large pan.
Heat the pan over medium low heat.
Once sizzling, remove garlic, add the chopped onion.
Sprinkle a pinch of salt and pepper.
Sautee over medium heat for about 6-7 minutes or until tender, stirring occasionally.
Sprinkle 1 tsp or to taste sweet paprika, mix.
You can also add some hot paprika if desired.
Add tomato paste and cook for about 1-2 minutes, stirring constantly.
Add pureed tomato, mix.
Add 1 cup hot water.
Sprinkle a pinch of granulated sugar, mix well.
Simmer over the lowest possible setting, for 5 minutes.
Sprinkle 1/2 tsp salt and cumin, a pinch of black pepper.
Mix then turn off the heat.
Add bulgur, mix well.
Cover and let stand for about 30 minutes.
Making sure to mix occasionally.
In the meantime, rinse the lettuce leaves, pat dry and place on a serving dish.
When bulgur is tender, add the chopped greens, mix.
Add lemon juice and pomegranate sour sauce.
Season to taste.
Drizzle with a good amount of olive oil, let KISIR shine 🙂
Mix gently, check for the seasoning.
Transfer into the serving dish, over the lettuce leaves.
Cover and chill for a few hours before serving.
Then put some KISIR in the center of lettuce leaves, wrap and
enjoy 🙂
