Kung Pao Chicken | Spicy Garlic Chicken
Ingredients
2cups cooking oil, to fry chicken in
4tbsp chilli garlic infused oil
1tsp ginger, finely chopped
1tsp garlic, finely chopped
1 small onion, chopped
1/2 cup green onion, chopped
1 jalapeño, cut into long slices
4 dried red chilis
Sauce
2tbsp soy sauce
2tbsp vinegar
1tsp sugar
1 cup water, adjust as needed
1tsp corn starch
Chicken Marination
350 grams boneless chicken, cut in small pieces
1 egg white, whisked
1tsp ginger, finely chopped
1tsp garlic, finely chopped
1tbsp soy sauce
1tbsp vinegar
1tbsp chilli garlic infused oil
1tsp black pepper, ground
Salt, as per your taste
1/2 cornstarch
Garnish
1/4cup peanuts, roasted
1/4cup green onions, cut in 1inch pieces
1tsp sesame seeds
Method
1. Marinate chicken with all the ingredients listed. Mix well, adding enough corn starch to create a layer on the chicken.
2. Heat oil and fry chicken on medium heat till golden and crispy. Remove from pan and let rest on strainer so the oil drains.
3. Add chilli infused oil in another hot pan. Add ginger, garlic, red onions, green onions, and jalapeños. Cook for a minute.
4. Add the remaining sauce ingredients: soy sauce, vinegar, sugar, water with the corn starch mixed in. Cook till it changes colour and thickens.
5. Add the fried chicken to the pan and mix it with the sauce.
6. Transfer to serving platter and garnish with with green onions, peanuts and sesame seeds.
Serve with egg fried rice and perhaps make our delicious lollipop chicken along with it! Enjoy 🙂
