【Kung Pao Chicken】
Ingredients:
500g chicken breast, 100g peanuts
1 cucumber, 1 carrot, 1 green onion, 20g ginger, 20g garlic, 100ML rapeseed oil
1 egg, 50ml light soy sauce, 10ml dark soy sauce, 20g starch, 20g dried chili, 20g white sugar
step:
1. Cut chicken breast, cucumber, carrot, ginger, garlic into small pieces, and scallions into small pieces;
2. Add egg white, light soy sauce and starch to the chicken and marinate for 10 minutes;
3. Use light soy sauce, dark soy sauce, white sugar, starch and 100ML of water to make the lack of juice;
4. Deep-fry the peanuts for fragrant use;
5. Add rapeseed oil to the pot and heat the oil to a high temperature. Add dried chili, ginger, garlic, and green onions to fragrant;
6. Add chicken and stir-fry for 1 minute, add cucumber and carrot, stir-fry for 1 minute, pour in the lack of juice;
7. After frying for 3 minutes, add peanuts, add salt, and fry for 1 minute;

【宮保雞丁】
配料:
雞胸肉500g、花生米100g
黃瓜1根、胡蘿蔔1根、大蔥1根、生薑20g、大蒜20g、菜籽油100ML
雞蛋1個、生抽50ML、老抽10ML、澱粉20g、乾辣椒20g、白砂糖20g
步驟:
1.雞胸肉、黃瓜、胡蘿蔔、生薑、大蒜切成小塊,大蔥成小段;
2.雞肉加入蛋清、生抽、澱粉抓均,醃製10分鐘;
3.以生抽、老抽、白砂糖、澱粉加水100ML調製欠汁;
4.將花生米炸香備用;
5.鍋中加入菜籽油,油溫燒高,先後加入乾辣椒、生薑、大蒜、蔥爆香;
6.加入雞肉炒1分鐘,加入黃瓜、胡蘿蔔,炒1分鐘,倒入欠汁;
7.炒3分鐘後,加入花生米,加鹽,炒1分鐘;
8.起鍋裝盤開吃。
