LAUKI SABUDANE KI KHEER AND RAJGIRE KI SMOOTHIE

A. LAUKI-SABUDANE KI KHEER:

INGREDIENTS

FULL CREAM MILK 1 LITRE (4 CUPS)
LAUKI I PEELED AND GRATED (PLEASE REMVCE THE CENTRE PART OF LAUKI) 1 CUP
SABUDANA 1/4 CUPS (SOAKED IN MILK AFTER THOROUGH WASHING) WITH APPROX 15 STRANDS OF KESAR
SUGAR 3/4 CUP (AS PER TASTE)
ELAICHI POWDER 1 TSP
DRY FRUITS NUTS (TOTAL 1/4 CUPS) – CRUSHED

PREPARATION:

1. Peel-off lauki and remove the central part of lauki and grate it.
3. Soak Sabudana in Milk for 15 minutes.
4. Add milk in a Pan and heat it on full flame.
5. After 5-8 minutes, add grated lauki in the pan & Mix.
6. After one boil, add kesar mixed in Sabudana Milk and Stir.
7. After 10-12 minutes, add Elaichi Powder and sugar and stir.
8. Boil it for some time with stirring to reduce the milk.
9. Consistency has become appropriate after approx 5 minutes after adding sugar.
10. Now add most of the crushed Nuts in the Kheer. Leave some for Garnishing. Again stir.
11. LAUKI SABUDANE KI KHEER IS NOW READY.

RAJGIRE KI SMOOTHIE:

INGREDIENTS

ROASTED & SALTLESS PEANUTS WITHOUT SKIN 2 TBSP
BANANA 1 NUMBER CUT IN SLICES
PUFFED RAJGIRE (AMARANTH) 3 TBSP
CRUSHED MIXED DRY FRUIT NUTS 2 TBSP
CINNAMON POWDER 1/4 TSP
SUGAR / BROWN SUGAR / HONEY 1 TSP
MAKHANE 1/4 CUP

PREPARATION:

1. CRUSH MAKHANE AND PEANUTS IN A GRINDER.
2. PUT BANANA, SUGAR, CINNAMON, PUFFED AMARANTH, CRUSGED MAKHANE AND PEANUTS AND A LITTLE MILK IN A MIXER AND RUN IT.
3. ADD REMAINING MILK IN IT AND AGAIN MIX.
4. THE SMOOTHIE IS NOW READY. YOU CAN GARNISH WITH GROUND DRY FRUITS, ANY OTHER FINELY CUT COLOURFUL FRUITS, NUTS AND ENJOY.
