Malpua are sweet pancakes made during festivals like holi and diwali. Malpuas are mostly served as a dessert snack with rabdi or with some nuts on top. This traditional Rajasthani sweet is crispy from the edges and sweet at the centre.

Ingredients: FOR MALPUA BATTER:
All purpose flour ( मैदा ) – 1/2 Cup
Milk Powder ( दूध का पाउडर ) – 1/2 Cup
Semolina ( सूजी ) – 1/4 Cup
Cardamom powder ( इलायची ) – 1 Tsp
Fennel powder ( सौंफ का पाउडर ) – 1 Tsp
Milk ( दूध ) – 3/4 Cup
Oil to fry – ( तलने के लिए तेल )
FOR RABDI :
Milk ( दूध ) – 1/2 Litre
Curd ( दही ) – 1/2 Tsp
Sugar ( चीनी ) – 2 Tbsp
FOR SUGAR SYRUP:
Sugar ( चीनी ) – 1 Cup
Water ( पानी ) – 1 Cup
Lemon juice ( नींबू का रस ) – 1/2 Tsp
Cardamom powder ( इलायची ) – 1/2 Tsp
Saffron ( केसर ) : 10 – 12 strands
