Mangalorean Chicken Urval Recipe:

Chicken (curry cut) – 500 grams

Marination:
Salt – ¾ tsp
Turmeric Powder – ½ tsp
Coriander Powder – 1 tsp
Cumin Powder – 1 tsp
Lemon Juice – 1 tbsp
Ginger Garlic Paste – 1 tbsp

Chilli Paste:
Kashmiri Chilli – 10 nos
Cashew Nut – 15 nos

Other Ingredients:
Butter – 3 tbsp + 1 tbsp
Curry Leaves – 20 nos
Green Chilli (slit) – 3 nos
Cashew Nuts (halved) – 10 nos

Cooking Instructions:

1. Combine the chicken with all the ingredients for the marination. Marinate for 30 minutes.

2. Bring a pot of water to a boil. Add the Kashmiri chillis and cashew. Boil for 5 minutes.

3. Remove it from the water. After it cools down, grind it into a fine paste, adding water as required.

4. Heat butter in a pan. Add the chilli paste and cook it for 5 minutes or until the butter separates from the sides.

5. Add the marinated chicken and saute for 2 minutes on high heat.

6. Cover and cook for 15 minutes or until the chicken is completely cooked. Remove from the heat.

7. In another pan, heat butter and add the cashew, green chilli, and curry leaves. Remove it from the heat when the cashew turns into light golden color.

8. Add it to the chicken and serve hot.

Cooking Tips:

1. This dish is fairly spicy. If you want a very mild version, you may de-seed the chillis before boiling them.
