Sneak Peak into the Mango Phirni recipe :
Ingredients :
Basmati Rice – 2 tbsp
Water – As needed
Mango Puree – 1 Cup (Fresh Pulp of Mango 2nos. )
Mango – 8-10 small cubes
Milk – 500 ml
Sugar – 4 tbsp
Saffron – 8-10 strands
Cardamom Powder – 1 tsp
Dry Fruits – Almonds and Pistachios (thinly sliced)
Method :
1. Wash and Soak basmati rice for 30 mins.
2. Drain the rice using a strainer.
3. Add the soaked rice to a mixer grinder and grind it into a coarse consistency.
4. In a mixer grinder, grind mango pulp into smooth paste to extract the mango puree.
5. In a Deep pan, add 500 ml milk and cook till it comes to a boil by stirring occasionally.
6. Add the ground rice mixture and cook till the milk is reduced into half and reaches the desired consistency.
7. Add sugar, saffron strands, cardamom powder and simmer unless the milk becomes creamy with a pouring consistency.
8. Add mango puree and mix well. The phirni should be thick with a pouring consistency.
9. Pour it in a serving bowl, garnish fresh mango pieces and dry fruits.
10. Chill in a refrigerator and serve cold for best taste.
