DELUX CHICKEN CURRY

Ingredients

Chicken 1 kg 12 pcs
Tomato paste 3 tbsp
Ginger garlic paste 2 tbsp heaped
Onion 1 cup finely chopped
Allspice 1 tsp
Salt 1 ½ tsp
Sugar 1 ½ tsp
Green cardamom grounded ¾ tsp
Cinnamon grounded ½ tsp
Roasted & crushed cumin 1 ½ tsp
Cream ¾ packets
Kasuri methi 1 tsp
Dhania powder 1 ½ tsp
Butter 4 ounce
Green chilies chopped 3
Chili powder 2 tsp
Oil 2 tbsp
Cashew nuts 12

METHOD

Marinate chicken with chili powder, cumin, coriander powder, salt, ginger garlic paste, leave it for 1 hour. Fry chicken in 2 ounce butter with 2 tbsp oil. In another pan, add remaining butter, fry chopped onion with cardamom, cinnamon, add tomato puree, sugar, green chilies, fry masala, add in remaining ingredients with chicken, fry well, add half cup water, cover and let the chicken tender. Lastly add cream, kasuri methi, leave it on dum, remove in a serving dish, garnish with cashew nuts.

HARA MASALA EGG CURRY

Ingredients

Boiled eggs 8
Ginger garlic paste 1 tbsp heaped
Raw onion 1 grounded
Cream 4 tbsp
Almonds grounded 2 tbsp
Yogurt ½ cup
Green chilies grinded 4
Coriander leaves grinded 2 tbsp
Cumin roasted and grounded 1 tsp
Salt 1 ½ tsp
Black pepper ½ tsp
Oil ½ cup
Chopped coriander leaves 3 tbsp
Turmeric a pinch

METHOD

Heat oil in a pan, add ginger garlic paste with grounded onion, black pepper, salt, turmeric and yogurt, fry masala well, add cumin roasted and crushed, when oil comes on top, add grounded almonds, cream, dhania powder, green chilies grounded, then add 1 cup water, cover and cook till gravy thick. Now add boiled eggs, cook for another 2 mins, remove in a dish, drizzle with cream, garnish with coriander leaves and serve.
