The ingredients for 7 portions:
-1 1/2 kg (3 pounds) of chicken
-1 cup of fresh orange juice
-6 potatoes
-1 broccoli
-4 carrots
-1 onion
-1 spring of thyme or 10 laurel leaves
-2 garlic cloves
-5 seasoning peppers
-1 pinch of cumin
-50 grams (.1 pound) of butter
-Salt to taste
*You can also add 1/4 kg (1/2 pound) of mushrooms
Making:
1. Cut the chicken in pieces and remove the chicken skin but leave the skin in the wings since it improves the dish´s taste.
2. Cook the chicken with the butter for 10 minutes (dissolve the butter at the bottom of the pan to prevent the chicken from sticking).
3. Shop the vegetables:
-The potatoes in small cubes of approx. 2 cm (1 inch)
-The carrots in small pieces (approx. of the same size)
-The onions in half-moon slices.
4. Blend the fresh orange juice with the spices (garlic, pepper, cumin and a teaspoon of salt)
5. Cut and wash the broccoli (you can add mushrooms, celery, corn or other vegetables if you like)
6. When the chicken is half-cooked, add the blended ingredients and the carrots, potatoes and thyme. Cook for 15 minutes.
7. After the 15 min. add the broccoli and onion. Leave it another 15 minutes and it is ready.
