Mini-Tiramisu with Strawberry (no eggs!) / Easy and delicious dessert / Italian recipe!


A tasty and fast recipe of a Tiramisu cream with no eggs, from an Italian Chef! With a traditional flavor of coffee and a bitter cocoa, it’s very close to the famous Italian dessert in taste. And a freshness of strawberry gives it some spring vibes… Also I added a bit of puffed rice, for crispness, but please skip this step if you don’t plane to serve tiramisu within 1 h, because puffed rice can lost its crispness fast.

For the Mini-Tiramisu with Strawberry you’ll need:

– 2 portions of mascarpone cheese, whipped with different adds like coffee, powdered sugar, sweet condensed milk and vanilla sugar (more is in the explanation below)
– sour cream (30% and higher)
– whipped cream
– strawberry
– Italian Biscuits (SavoiardiLadyfingers cookies), bought in bakery
– puffed rice (but please skip this step if you don’t plane to serve tiramisu within 1 h)
– bitter cocoa

This recipe gives a big nice portion of cream, it will be enough to layer and cover a medium-sized festive cake. You can scale it up or down if you want to make a smaller or bigger batch.

Ingredients and preparation:

– Get the best strawberry you can!
– Prepare a cup of your favorite coffee. Such a beautiful flavor!.. Set aside 2 dstspn of coffee, we’ll need it a bit later
– Whip 200 mL of cream in an ice-cold bowl
The bowl and beaters should be perfectly clean and dry, and also very cold. I like to put my cream, beaters and bowl in the freezer for at least 40 min before whipping. This way whipped cream will be done just great and fast!
Beat the cream around 1.5 min, to get smooth cloud-like texture, starting from the lower speed and increasing it while you whip
Do not over-whip it, or instead of soft and flowy cream it can become curdled! It’s simple, but still it’s something everyone messed up with it at some point, so just be aware of that!

1st portion of mascarpone:
– In another bowl, slightly beat 250 g of mascarpone,
adding to it 100 g of powdered sugar
– Also add 2 dstspn of coffee we had set aside, and whip just to combine ingredients
Do not over-whip in any stage of this recipe!

2d portion of mascarpone:
– In another bowl, unite 500 g of mascarpone with 400 of sour cream and 180 g of sweet condensed milk
and 0.5 tsp of vanilla sugar
– Whip it just to combine ingredients

– Now combine 1st and 2d mascarpone portions,
add whipped cream
and slightly whip all together

In any stage of this recipe,
when your cream starts thickening up, you’ll see smooth trails left by the beaters – it’s time to stop beating!

– Fill dessert cups with the cream, using a pastry bag
add layers of Savoiardi, dipping it for 2 sec in a just prepared coffee.
