Chicken breast recipe | How to cook chicken breast
Today I’m making my delicious mint yogurt chicken breasts! This chicken breast recipe has a lovely mint flavour without being too overpowering. Yogurt helps the chicken turn tender as well as balance the freshness of mint with some acidity. This recipe is also a great chicken breast marinade and can be stored in the freezer for later use.
The cooking method shown in the video will result in tender chicken breasts that are bursting with flavour. This chicken breast dish is delicious on its own but can be paired with flatbreads, wraps, salad or rice too.

*RECIPE*
INGREDIENTS: (2 servings)
2 chicken breasts
10-12 mint stems (1/2 cup packed leaves)
2 tbsp olive oil
MARINADE:
100g/0.5 cup yogurt
1 tsp crushed oregano
1 tsp cumin powder
1.5 tsp garlic paste
1/2 tsp salt (taste and add as needed)
PROCESS:
1. Separate the leaves from 10-12 mint stems (1/2 cup packed leaves) and finely chop them
2. Slice 2 chicken breasts into evenly thick filets and lightly score as shown in the video. Scoring (to cut shallow slits on the surface of meat) helps the chicken absorb more of the marinade and also makes it tender
3. Mix together the marinade ingredients and coat the chicken with it. Set aside for at least 30 minutes
4. On medium heat, add 2 tbsp olive oil in a wide fry/sauté pan. When the oil has heated add the chicken breasts without crowding the pan
5. Sear the chicken breasts for 2 minutes per side
6. Cover with a lid and cook for 5 minutes on low heat
7. Take off the pan and let it rest for 5 minutes before cutting the filets. This helps lock in the moisture and keep the chicken tender
8. Serve with flatbread, wrap, salad or rice

SUBSTITUTES:
• No yogurt?
Hung curd/thick curd works too
• No oregano?
Substitute with 1 tsp crushed carom seeds
• Can dried mint be used?
Yes but fresh mint is recommended

TIPS:
• Marinade the chicken for 2 hours or overnight for the best flavour
• If using refrigerated chicken, allow it to come to room temperature before cooking. This will help the chicken cook evenly
• Don’t crowd the pan while cooking the chicken or it will release excess water
