This is a very healthy and delicious light , fresh and tasty salad that is full of crisp and crunchy vegetables,olive oil,corn,cucumber ,carrot,cottage cheese a simple dressing …this salad is an easy to make fresh and healthy meal …. .Try this healthy salad recipe today and let me know how it went.

Ingredients_________________________

– 1 small red onion sliced thinly
-2 Lebanese cucumber the small ones
( peeled and roughly chopped)
-1/2 carrots (peeled & roughly chopped )
-1/2 cup Corn  (boiled )
– 9 -10 olives
-cottage cheese 100 g, (cut into cubes)
-5-6 lettuce leaves ( I used iceberg lettuce)
-2 to 3 tablespoons extra virgin olive oil

Instructions__________________________

In a large bowl, combine carrots , cucumber, corn, olives, cottage  cheese, and onion.Add 2 to 3 tablespoons extra virgin olive oil. Season with salt and pepper to taste.

Scoop a few tablespoons of the salad in prepared lettuce leaves (do not overload) and serve
