Mud baked chicken/Beggars Chicken is prepared by marinating chicken with spices and wrapped in banana leaves and aluminum foil, then encasing it in mud and roasted in open fire.
Ingredients
Coriander Powder-3 tbsp
Garam Masala-2 tbspn
Pepper Powder-11/2 tbspn
Chilli Powder- 2 tbspn
Turmeric Powder-1 tbspn
Ginger Garlic paste-1/3 cup
Juice of one lime
Curd-1/4 cup
Salt
Oil-2 tbspn
Method
Clean the chicken and Pat dry.
Make Gashes on the chicken
Make a paste with Coriander powder,Garam masala, Pepper poeder,Red Chilly powder,Ginger garlic paste, turmeric, lemon juice,curd ,salt and oil.
Marinate the chicken with spice paste.
Refrigate for 2 hrs
Placed the spiced chicken in the Banana leaf, wrapped it around the chicken
Wrap it with an aluminum foil
Dug out some soil about six inches below the surface after clearing the top soil
Add little water to the soil and make mud.
Apply the mud casing over wrapped spiced chicken.
Make an open fire above the wrapped chicken
We made an open fire using old woods.
Dried leaves and coconut husks helped us to keep the fire going
It took about 2 1/2 hours to roast the chicken
Remove the roasted Chicken from the fire and allowed it to cool for some time, then broke the hardened mud-casing.
