Ingredients:
-3-4 pound chuck roast.
-2-3 pounds of short ribs.
-Mexican or all purpose Seasoning.
-1 onion.
-Guajillo and ancho chilies.
-12oz tomato sauce.
-1 cinnamon stick.
-1 tablespoon garlic powder.
-1 teaspoon oregano.
-1 teaspoon cumin.
-3 cups beef broth.
Prep:
-Season roast and short ribs, please in refrigerator overnight.
-Put the WFG on smoker setting at 300F. 3-4 hours should be enough time to set.
-Add the beef to the grill and smoke until the roast hits 170F internal.
-Place the beef and the other ingredients in a pan or tin foil and seal tightly.
-Put the pan back in the WFG, keep it on the smoker setting and continue to cook unitl the roast hits 205F internal.
-Remove from the grill and let it rest for 20-25 minutes.
-Remove the beef from the pan and set aside.
-Strain out the contents of the pan, this will be your consume.
-Shred the beef.
-Now you can make your tacos, burritos, pizza, whatever you want to put your birria on.
