One Pan Chicken Meal – recipe in the description


One Pan Chicken Meal: I didn’t want to use or have to clean multiple pots and pans so I decided to put this together. In a disposable aluminum pan, on one end I put a bag of frozen green beans seasoned with kosher salt and black pepper. On the other end, I put a bag of frozen baby carrots, potatoes with pearl onions seasoned with kosher salt and pepper pepper. In the middle, I put my seasoned chicken wings and drumsticks. I added sprinkled everything with chopped garlic, onion and chives, and I threw in a couple of bay leaves. I drizzled it all lightly with extra virgin olive oil and added a few slashes of white drinking wine. I covered it with foil and baked at 350 degrees for about an hour. Then, I uncovered and cooked another 30 minutes while basting periodically with its drippings until the chicken browned. You can season the chicken with whatever you like. If you have my cookbook, you know my dry rub would be an excellent choice. So glad we love leftovers because this was so good! As always, my recipes are a guide. Be creative…make it your own!
