Ingredients for Chicken
1 Tsp Chicken spice
Salt to taste
1/2 pepper
1/2 smoked paprika
1 tsp chilli powder
1 tsp steak and chops spice
1/2 tsp curry powder
1 tap cumin
2 tbsp olive oil
For Rice
2 cups washed long-grain rice, such as jasmine or basmati
1 tsp cumin
2 Bay leaves
1/2 tsp turmeric powder
Salt to taste
Pepper
1 dry minced onion
1 tsp all purpose spice
2 cups chicken Stock
1 can coconut milk
Garnish- fresh cilantro or chives and lime wedges.
It’s perfect for a weeknight meal because everyone is busy and tired. Very Creamy, delicious and flavourful dish . I promise you this will become your new favourite 30-minute weeknight meal.
First, marinate the chicken. Combine chicken thighs with marinade ingredients in a mixing bowl. Mix and coat the chicken well. You can use any combination of spices. They is no right or wrong. Cover with cling wrap and refrigerate for at least 30 minutes or overnight. For rice you need 2 cups any stock and 1 can of coconut. The proportion is 1 1/2 cup of stock or water for 1 cup of rice. You need 3 cups of stock or water if you have no stock.
