Ingredients:
cups fruit juice (e.g., grape, apple, or berry juice)
cup lemon juice
package fruit pectin
cups granulated sugar
Instructions:
Prepare Jars and Lids:
Sterilize your canning jars and lids by washing them in hot, soapy water and then placing them in a boiling water bath for 10 minutes. Allow them to air dry.
Prepare Fruit Juice:
Extract the juice from your chosen fruit (or use store-bought 100% fruit juice). Strain if necessary to remove pulp and seeds.
Combine Ingredients:
In a large pot, combine the fruit juice, lemon juice, and fruit pectin. Stir well.
Bring to a Boil:
Bring the mixture to a boil over medium-high heat, stirring constantly.
Add Sugar:
Once boiling, add the granulated sugar all at once. Stir constantly to dissolve the sugar.
Boil Rapidly:
Bring the mixture back to a rapid boil. Boil for 1-2 minutes or until the jelly reaches the desired consistency. You can test this by placing a small amount on a cold plate and letting it sit for a moment to see if it gels.
Skim Foam:
Skim off any foam that forms on the surface of the jelly.
Fill Jars:
Pour the hot jelly into the prepared sterilized jars, leaving about 1/4 inch of space at the top. Wipe the rims of the jars with a clean, damp cloth.
Seal Jars:
Place the sterilized lids on the jars and screw on the metal bands until they’re fingertip-tight.
Process Jars:
Process the jars in a boiling water bath for about 5-10 minutes to ensure proper sealing.
Cool and Store:
Allow the jars to cool completely before checking the seals. Once sealed, store the jars in a cool, dark place.
