Paleo Coconut Chicken: A Crunchy Crusted Chicken Recipe

In this video, I make delicious paleo coconut chicken pieces. It’s a straightforward recipe that only requires three ingredients. At the end of cooking, you’re left with crunchy coconut flavored bits of chicken.

2 chicken breasts
2 eggs
2 cups shredded coconut
Salt & Pepper
Oil for frying

In the video, I fry the chicken, but you can also bake them in the oven if that’s what you would prefer. If you do cook the chicken in the oven, then roughly 15 minutes in a preheated oven set at 200°C (400°F) is all you need to do.

These crunchy coconut-crusted bits of chicken are fantastic just by themselves. Still, they also go great in salads as well. One of my personal favorites is dipping the chicken in some ranch dressing (Paleo-friendly, of course).

You can also add paprika or cayenne pepper to the coconut mix to help add a bit more flavor. It’s the perfect change if you’re finding plain coconut a little too strong in coconut flavor for you.

It’s important to beat out the slices of chicken to ensure that they cook evenly and all the way through. Uneven chicken may cause one bit to be overcooked and the other bit to be undercooked.

Since we’re not using thick flours or anything else to help the coating stick, it’s important to not play around with the chicken too much. Playing around with it may cause the coating to fall off.
