Peach Cobbler is a great recipe if you are craving for a dessert that includes fruits. It’s a special one, not because of its flavour and taste but also because of the freshness that the peaches add in every bite. Yes, this is the solution to a bad day, bad night or even a bad mood. You can replace the peaches with any fruit (like apples, berries etc..).

Ingredients for Peach Ice-cream:
2 cups peach puree
1 cup full fat milk
1 cup milk powder
1 cup cream
1 tsp vanilla essence
3/4 to 1 cup sugar (vary depending on the sweetness of peaches)
Method:
Blend all ingredients in a blender or mixer until creamy and well blended.
Freeze for 6-8 hours.
Ingredients for Peach cobbler:
For peach filling
7 ripe peaches
1/2 cup sugar
1 teaspoon corn flour
1 tablespoon lemon juice (optional, pls avoid if peaches are not sweet enough)
¼ teaspoon salt
1/2 teaspoon vanilla essence
Ingredients for the Topping:
1 cup self-raising flour
1 teaspoon baking powder
¼ teaspoon baking soda
1/2 cup granulated sugar
¼ teaspoon salt
⅓ cup cold butter
4 tsp plain yogurt or cream
Method:
Wash and cut up the peaches either into chunks.
Toss the peaches with sugar, corn flour, lemon juice, salt and vanilla
Place the peach filling in a baking dish and Bake the peaches for 10 to 15 minutes to cook
To make the Cobbler Topping:
While peaches bake, make the crumble
In a bowl, whisk together flour, baking powder, baking soda, sugar and salt.
Rub butter into the flour mixture using your fingers until it resembles bread crumbs.
Stir in yogurt or cream until just combined Be careful not to overmix
Remove peaches from the oven and scatter the crumble topping on top.
Bake for 40-45 minutes, until the crumble turns a brown shade on top
Serve warm or cold with ice cream
