2 8 oz Chicken Breasts
1 lemon
salt, pepper, garlic, onion powder, cajun seasoning, chili powder
1/2lb ground sausage (your preference.. beef/pork/turkey/etc)
4 stalks celery
1/2 diced white or yellow onion
1/2 red bell pepper
1/2 green bell pepper
3 cloves of garlic
Italian Seasoning
smoked paprika
cayenne pepper
cajun/creole seasoning
No Sodium Chicken Stock
1lb Frozen Cauliflower Rice
Green Onions & parsley
Better than bouillon chicken base (low sodium if desired)
Aioli:
1/2 cup mayo
1 tsp worcestershire sauce
1 tbsp garlic paste
1 tbsp lemon juice
cayenne pepper
chili powder
old bay
salt & pepper
Directions:
Start by making your cauliflower rice. Cook frozen riced cauliflower in the microwave per package instructions and set aside. Heat skillet and add avocado oil and 8 oz of sausage. Brown the sausage and then add in the cajun trinity (peppers, onion, celery) and cook until veggies become tender. Add a splash of chicken stock to deglaze the pan. Add 1 tbsps better than bouillon chicken base and mix to combine. Add cauliflower rice and toss to incorporate all ingredients. Season to taste and garnish with parsley and/or green onion.
Preheat oven to 400 degrees. Season chicken breast generously and heat skillet. Add cooking oil and coat skillet evenly. Lay the chicken breast away from you and press down to maximum contact to ensure you get some good even color. Cook for 60-90 seconds per side and place in the oven at 400 degrees for 5-10 minutes or until chicken reaches 165 degrees internal temperature in the thickest part of the breast. Allow meat to rest 5-10 minutes before slicing. Squeeze fresh lemon juice on the final product and plate.
