Can’t choose between fruit or a sweet for dessert? Well, we solved that for you! To make this decadent deliciousness you’ll need to get pineapple, cashews, and Rava (semolina). Let’s get cooking! Oh and don’t forget we’ll be waiting to see how this turned out for you guys!
Pineapple Kesari Recipe:
Ghee – 2 tbsp + 1 tbsp
Cashew Nuts – 10-15 nos
Rava – 1 Cup
Water – 3 Cups
Pineapple (diced) – 1 ½ Cups
Yellow Food Colour – Optional
Sugar – 1 ½ Cups
Saffron (optional) – A Few Strands
Cooking Instructions:
1. Heat ghee in a pan, fry the cashew nuts until golden, remove them, and add the rava, roast for 5 mins on a medium flame.
2. Transfer to a plate and set aside.
3. In the same pan, add water and the diced pineapple.
4. Allow it to boil for 5 mins and mash the pineapple chunks. Add the food colour, if needed.
5. Add the roasted Rava and mix until the water is absorbed.
6. Add the sugar on a low flame and mix until the sugar has dissolved.
7. Keep simmering on a low flame while stirring constantly until the Kesari has thickened.
8. Finish with ghee and saffron.
